Lifting a pan lid lets heat escape, disrupts the steam, and usually means leaning over a hot pan. The glass centre window solves all three problems at once.
Kyoto Katsugu (京都活具) is a specialist kitchenware shop established in 1950 in Kyoto's Nishiki Market, the 400-year-old arcade known as Kyoto's Kitchen. Rather than manufacturing directly, Katsugu curates and commissions tools from the city's network of blacksmiths, woodworkers and fibre craftsmen, selecting each item for balance, durability and everyday practicality. This pan cover combines an 18/8 stainless steel frame with a tempered glass centre, so you can monitor browning, simmering or melting without disturbing what is cooking. The slightly domed profile circulates steam back onto the food. The natural wooden handle stays cool to the touch and gives a warm contrast to the steel and glass. A practical tool with a considered material combination. Available in Medium and Large; the handle is designed to stand the cover upright when removed from the pan.
