Finely grated daikon is one thing. But the lightly textured, coarse-cut strips that come from a traditional Japanese shredder are something different: they hold sauces and dressings better, and give a more satisfying bite.
Kyoto Katsugu (京都活具) is a specialist kitchenware shop established in 1950 in Kyoto's Nishiki Market, the 400-year-old arcade known as Kyoto's Kitchen. Rather than manufacturing directly, Katsugu curates and commissions tools from the city's network of blacksmiths, woodworkers and fibre craftsmen, selecting each item for balance, durability and everyday practicality. This shredder uses a stainless steel blade in the traditional Japanese style, designed to produce a short, coarse cut rather than fine uniform shreds. The lightly textured surface that results helps seasonings cling and improves the texture of finished dishes. Suited to daikon, carrot, burdock root, ginger and cabbage. The natural wooden handle gives a comfortable, secure grip and a warm contrast to the steel. Easy to clean, easy to store.
