Wet the surface of a hinoki cutting board and a fresh, resinous woodland fragrance appears immediately. It is a small sensory pleasure, but it also tells you something about the natural material: this board is made to bring the warmth and quiet character of Japanese cypress into everyday food preparation.
Kyoto Katsugu (京都活具) is a specialist kitchenware shop established in 1950 in Kyoto’s Nishiki Market, the historic arcade often known as Kyoto’s Kitchen. Rather than manufacturing every item directly, Kyoto Katsugu curates and commissions tools from skilled Japanese makers, selecting pieces for balance, durability and everyday practicality.
This board is made from Tōnō Hinoki, a Japanese cypress from the Ura-Kiso region of Gifu Prefecture. The timber is valued for its pale colour, fine straight grain and fresh natural aroma. Hinoki is moderately soft compared with many hardwoods, giving knives a gentler surface to meet and helping preserve a comfortable cutting feel.
The board is lightweight and relatively thin for its size, so it is easy to lift, rinse and dry after use. Its straight-grain construction is selected to help reduce movement, although hinoki remains a natural wood and may respond to changes in temperature and humidity.
Available in three sizes. For everyday care, wet both sides evenly before use, rinse the board after use and dry it in the shade with air able to reach both sides. Avoid prolonged soaking, direct heat, dishwashers and microwaves.
